Melon Beetroot Smoothie

One small beetroot is enough to turn pale honeydew melon a deep magenta. The melon keeps the drink juicy and sweet, the beet adds an earthy undertone.

About this smoothie

Beetroot has a naturally sweet, earthy flavour, and precooked, vacuum-packed tubers from the supermarket make it easy to use in smoothies. It is a source of folate and gives the drink its striking colour. Honeydew melon is mostly water and brings a mild, honeyed sweetness that softens the earthiness. The combination is light, refreshing and unusual enough to surprise guests at brunch.

Bartender tips

  • Use plain precooked beetroot, not the pickled kind in vinegar.
  • Beetroot stains: rinse the blender and cutting board straight away.

Variations

With ginger
A small piece of fresh ginger adds warmth and sharpens the flavour.
