Method

  1. Wash and halve the apricots and remove the stones.
  2. Put water, apricots and frozen berries into the blender.
  3. Blend for about 60 seconds until smooth.
  4. Pour into a glass and drink fresh.

About this smoothie

Apricot season is short, usually early to mid summer, and ripe fruit is worth using quickly because it softens fast. Apricots give the smoothie body and a gentle sweetness with a tart edge, while mixed berries add colour and intensity. Apricots contain provitamin A (beta carotene), berries vitamin C and fibre.

Without banana or dairy this remains a light fruit smoothie. It works well for breakfast or as a refreshing snack on a warm day.

  • Add half a banana if you want it creamier and sweeter.
