Coconut Kiwi Smoothie with Basil

Basil and kiwi make a surprisingly good match: the herb brings peppery freshness, the fruit a lively tang. A teaspoon of coconut oil softens the green edge.

About this smoothie

Kiwi gives this green smoothie its sweetness and acidity and is known for its high vitamin C content. Basil, usually associated with savoury dishes, pairs well with fruit and adds a peppery, slightly anise-like aroma. Baby spinach deepens the colour without adding much flavour. Coconut oil is mainly saturated fat and is used here in a small amount for a rounder mouthfeel and a hint of coconut. It suits breakfast or a fresh snack.

Bartender tips

  • Add the oil while blending so it mixes in evenly and does not set.
  • A little honey or half a banana helps if your kiwis are very tart.

Variations

Coconut water version
Replace the water with coconut water and skip the oil for a lighter coconut flavour.
