Method

  1. Sort the berries and rinse them briefly.
  2. Melt the coconut oil gently if it is solid.
  3. Put berries, coconut oil and coconut milk into the blender.
  4. Blend for about 45 seconds until smooth and serve at once.

Mixing several berries gives a more complex flavour than any single one. Blackberries and blueberries contribute deep colour from anthocyanins, raspberries add perfume and acidity. All three are known as good sources of fibre and vitamin C. Coconut milk drink and a teaspoon of coconut oil give the smoothie a round, tropical creaminess without dairy.
