Taste
Berry-sweet and slightly tart, thicker than a classic smoothie, with tiny seeds you can feel on the tongue.
About this smoothie
Chia seeds absorb liquid and form a gel, which is why this smoothie thickens noticeably as it stands. They are known as a source of fibre and plant omega-3 fatty acids, and they have almost no taste of their own.
The fruit tea keeps the base light, while blueberries, strawberries and banana deliver sweetness and colour. Drink it slowly as breakfast, or take it along in a sealed jar.
Bartender tips
If you prefer it smooth, blend the chia seeds on high speed for 20 seconds so they break down.
Stir before drinking: chia settles to the bottom if the jar stands for a while.
Variations
Flax version
Use 1 tbsp ground flaxseed instead of chia for a nuttier taste.
Frequently asked questions
Why does the smoothie get thick?
Chia seeds soak up liquid and swell. Add a splash of tea or water if it becomes too thick.
Can I prepare it the night before?
Yes, it keeps well in a closed jar in the fridge for a day. It will be thicker in the morning, so stir in a little liquid.
