Pineapple and coconut water give this smoothie a clear tropical taste, and the banana makes it smooth. The spinach is there for colour; you will hardly notice it.

About this smoothie

A light green smoothie that tastes more of the tropics than of leaves. Pineapple provides acidity and aroma, banana adds sweetness and body, and baby spinach turns the colour a fresh green. Pineapple contains the enzyme bromelain, which is why the drink can taste slightly tingly if it stands too long.

Coconut water keeps the glass light, so it suits a warm morning or the time after exercise. Drink it within half an hour for the best flavour.

Bartender tips

  • Use a fully ripe pineapple: it should smell sweet at the base.
  • Frozen banana slices give more body without ice.

Variations

Coconut oil version
Replace the coconut water with cold water and add 1 tsp coconut oil for a richer mouthfeel.
