Banana Apricot Smoothie with Fruit Tea

Cooled fruit tea replaces milk here, so the apricots keep their slightly tart, perfumed edge. The banana does the rest, adding body and a soft sweetness.

About this smoothie

Using brewed tea as the liquid is an easy way to add aroma to a smoothie without adding sugar. A hibiscus or berry fruit tea brings a light acidity that suits stone fruit well. Apricots are at their best in early summer and are a source of beta carotene, which gives them their orange colour. The banana makes the drink creamy even without dairy. It works as a light breakfast or an afternoon snack on a warm day.

Bartender tips

  • Brew the tea the evening before and chill it, so the smoothie comes out properly cold.
  • Out of season, use drained apricot halves canned in juice rather than syrup.

Variations

Peach version
Swap the apricots for one ripe peach for a juicier, milder drink.

Frequently asked questions

Can I use frozen apricots?

Yes. Frozen apricot halves make the smoothie colder and thicker, so add a little more tea if needed.

Is this smoothie vegan?

Yes, it contains only fruit and tea.

Which fruit tea works best?

A berry or hibiscus blend without added sugar gives the nicest acidity. Very sweet flavoured teas can make it cloying.
