This is a savoury green smoothie: macadamias and cashews blend into a creamy nut milk, and rocket gives it a peppery bite. Half a banana is optional if you want some sweetness.

Method

  1. Soak the macadamias and cashews in the water for at least 30 minutes.
  2. Wash the rocket and spinach.
  3. Blend nuts and water first for 60 seconds until milky.
  4. Add the greens and the banana if using, and blend for another 30 seconds.

About this smoothie

Macadamia nuts come originally from Australia and have a buttery, mild flavour; cashews are softer still and blend into a naturally creamy base. Together with water they form a kind of fresh nut milk. Rocket brings its characteristic peppery, mustard-like sharpness and baby spinach a mild green note. Nuts provide mostly unsaturated fats, so the glass is quite filling. Without fruit it tastes savoury, more like a cold green soup than a sweet smoothie.
