About this smoothie

For smoothies, use a coconut milk drink from the carton rather than canned coconut milk, which is much thicker and richer. The drink is light, mildly sweet and gives the smoothie a creamy texture without dairy.

Lettuce is one of the gentlest greens: it tastes of almost nothing but freshness and has a high water content. The green apple provides acidity and sweetness. Together they make a light, creamy smoothie that works well as a breakfast or a mid-morning snack.

Bartender tips

  • If you only have canned coconut milk, use 50 ml and top up with 100 ml water.
  • A few mint leaves pair very well with coconut and apple.

Variations

With spinach
Swap the lettuce for baby spinach for a darker, slightly more nutritious green.
