About this smoothie

Apricots are at their best in early summer; ripe ones are soft, fragrant and slightly tart, and they contain provitamin A. Combined with freshly squeezed juice and a whole orange, known for vitamin C, they make a bright, juicy smoothie. Fresh ginger contributes a clean, warming heat that lifts the fruit. It is a sunny, refreshing glass for breakfast or a warm afternoon.

Bartender tips

  • Out of season, use dried apricots soaked in the orange juice for 15 minutes.
  • Start with a little ginger and add more to taste.

Variations

Without ginger
Leave out the ginger and add a few mint leaves instead.
