Shape and purpose
A Collins glass is tall and narrow, usually holding about 300 to 400 ml. It is a little taller and slimmer than a highball glass. The shape keeps carbonation lively and shows off layers of ice, fruit and herbs.

Tips
- Shake the spirit, citrus and sugar first, strain over fresh ice, then top with soda.
- Fill the glass with ice to the top so the drink stays cold and the soda stays fizzy.

- Garnish at the top, for example with a lemon wheel and a cherry or a mint sprig, so the aroma reaches the nose.
