Spicy Margarita

Fresh jalapeño brings more than heat: it adds a green, almost bell pepper flavour that suits the grassy agave of a blanco tequila surprisingly well. The salt rim takes the edge off the burn, and the lime keeps everything sharp and cold.

Method

  1. Rim half of a rocks glass with salt and fill it with fresh ice.
  2. Put the jalapeño slices and agave syrup in a shaker and press them lightly with a muddler.
  3. Add tequila, Cointreau and lime juice, fill with ice and shake hard for 12 to 15 seconds.
  4. Double strain into the glass so no seeds or pepper bits end up in the drink.
  5. Garnish with a lime wheel and, if you like, a thin jalapeño slice.

History and origin

The Spicy Margarita is a modern member of the Margarita family, which pairs tequila with lime and orange liqueur. Adding fresh chili or a chili-infused tequila became common in American cocktail bars in the 2000s and 2010s, and there is no reliable record of a single inventor. Today it is one of the most requested variations of the Margarita on bar menus.

The origins of the Margarita itself are disputed. Several bartenders and hosts in Mexico and the United States have been credited with it, and none of the stories can be proven. What is clear is that the drink follows the older pattern of the Daisy (spirit, citrus and orange liqueur), and "margarita" is the Spanish word for daisy.

Bartender tips

  • Heat varies a lot between peppers. Taste a tiny piece first; remove the seeds and white ribs for a milder drink.
  • For consistent heat when serving many people, infuse tequila with sliced jalapeño for 15 to 30 minutes, tasting as you go, then strain.
  • Mixing chili powder or smoked salt into the rim salt adds flavour without making the drink itself hotter.
