No orange liqueur, no shortcuts: just tequila, lime and agave nectar shaken hard and poured over ice. The result is cleaner and more peppery than a classic Margarita, with the agave taste front and center.

Noble-Rita
Taste
Tart and fresh with bright lime, green, peppery agave and a round, honeyed sweetness. Medium strength, clean finish.
History and origin
The Noble-Rita is a brand recipe named after Casa Noble tequila, and like the Noble Punch it was created to showcase that producer's blanco. There is no long history behind it, but it belongs to a clear and well-documented style.
Its formula closely follows the Tommy's Margarita, created in the early 1990s by Julio Bermejo at his family's restaurant, Tommy's Mexican Restaurant in San Francisco. Bermejo dropped the orange liqueur of the classic Margarita and sweetened the drink with agave nectar instead, so that the sweetener comes from the same plant as the spirit. That approach became hugely influential and is now a standard way to make a margarita in many bars.
Bartender tips
Salt only half the rim so each sip can be taken with or without salt.
Agave nectar varies in sweetness; start with 15 ml and adjust after tasting.
Squeeze the limes just before mixing: lime juice loses its brightness within hours.
