Russian Spring Punch

Method

  1. Add vodka, lemon juice, crème de cassis and syrup to a shaker.
  2. Fill with ice and shake briefly, about 8 seconds.
  3. Strain into a highball glass filled with ice cubes.
  4. Top slowly with chilled Champagne and stir once from the bottom.
  5. Garnish with a lemon wheel and a few fresh berries.

History and origin

The Russian Spring Punch is credited to Dick Bradsell, the London bartender behind the Espresso Martini and the Bramble. He created it in the 1980s, a period when he was reshaping the London bar scene with simple, fresh drinks that later became modern classics.

The name has little to do with Russia beyond the vodka base, and the "punch" refers to its long, fruity, sparkling style rather than to a bowl. Structurally it is a vodka sour lengthened with Champagne and coloured with crème de cassis, a relative of both the Kir Royale and the French 75. It became a staple in London bars and was later included in the IBA list of New Era Drinks.

Bartender tips

  • Use a good crème de cassis with real fruit character; cheap versions taste of sugar and little else.
  • Keep the shake short: the drink gets plenty of dilution from the ice and the sparkling wine.
  • For a party, pre-mix the vodka, lemon, cassis and syrup and top each glass with sparkling wine to order.

A dry Crémant or Cava works just as well as Champagne and keeps costs down.
