Oak-rested agave, dried chile and a hint of cocoa and cinnamon from the mole bitters, all stirred cold over one big cube. It sips like an Old Fashioned but finishes with a slow, gentle heat.

In Noble Fashion
Taste
Warm and layered, with vanilla oak and cooked agave, dried chile heat and a bittersweet finish of orange and cocoa. Strong and slow-sipping.
History and origin
In Noble Fashion is a modern tequila twist on the Old Fashioned, and its name plays on Casa Noble, the tequila brand used in the original recipe. It follows a template that became popular in the craft cocktail era: a base spirit other than whiskey, a small amount of sweetener and bitters, stirred and served over a large ice cube.
The ancho chile liqueur brings sweetness and a smoky, raisiny heat, and the mole bitters echo the chocolate and spice of Mexican mole sauce. There is no documented creator or date for the drink; it belongs to the wider family of agave Old Fashioneds such as the Oaxaca Old Fashioned.
Bartender tips
Taste the chile liqueur first; brands vary in heat and sweetness, so adjust the syrup accordingly.
A reposado gives the right balance of agave and oak; blanco makes it sharper, añejo richer.
Mole bitters are strong; drops rather than dashes keep them in check.
