Frozen Margarita

On a really hot day, a shaken Margarita warms up too fast. Blended with ice it turns into a fine, spoonable slush that stays cold to the last sip, sharp with lime and softened just enough by sugar.

Garnish: Salt rim, lime wheel · Ice: Crushed ice

Method

  1. Rim a margarita glass with salt and put it in the freezer.
  2. Add tequila, triple sec, lime juice and simple syrup to a blender.
  3. Add about one cup (roughly 150 to 200 g) of crushed ice.
  4. Blend on high for 20 to 30 seconds until smooth, with no chunks left.
  5. Pour into the glass and garnish with a lime wheel.

Icy, sharp and refreshing: fresh lime and agave with gentle orange sweetness, a smooth slushy texture and salt at the rim. Milder than a shaken Margarita because of the extra ice.

History and origin

Blended Margaritas were made in bars with electric blenders well before 1970, but the frozen Margarita as a draught drink has a clearly documented origin. In 1971 Mariano Martinez, who ran a Mexican restaurant in Dallas, adapted a soft serve ice cream machine to produce frozen Margaritas of consistent quality at high volume.

The idea spread quickly across Texas and then the United States, and frozen drink machines became standard equipment in Tex-Mex restaurants. Martinez's original machine was later acquired by the Smithsonian's National Museum of American History. At home the drink is still made the older way, in a blender, which works perfectly well with the right ratio of ice to liquid.

Bartender tips

  • Frozen drinks need more sugar than shaken ones, because cold dulls sweetness. Taste and add syrup in 5 ml steps.
  • Use crushed ice or small cubes; large cubes leave chunks and strain the blender.
  • For a batch, freeze lime juice as ice cubes in advance so the drink stays strong and tart instead of watery.

Variations

Frozen Strawberry Margarita
Add 4 to 5 ripe or frozen strawberries and reduce the ice slightly.
Frozen Mango Margarita
Blend in 80 g frozen mango chunks for a thicker, fruity version.
