Noble Punch
Taste
Fruity and fresh with pineapple, zesty lime and peppery agave, lifted by soda and a hint of spice from the bitters. Light and easy.
History and origin
The Noble Punch is a modern tequila drink rather than a historic one, and its name points to Casa Noble, the tequila brand whose blanco the recipe originally calls for. Like many brand recipes it is designed to show off the spirit in an approachable way, and any good blanco tequila works just as well.
Despite the name, it is not a bowl punch but a single-serve cooler that borrows the punch formula of spirit, citrus, sweetness and fruit. Pineapple is a natural partner for agave, as countless tiki-style tequila recipes show, and the soda keeps it lighter than a shaken sour.
Bartender tips
Freshly pressed pineapple juice gives a lovely foamy head when shaken; canned juice works but is flatter.
Pour the soda gently down a bar spoon to keep the bubbles.
For a party, multiply the shaken part in a jug, chill, and add soda to each glass just before serving.
Variations
Mezcal Punch
An easy twist: swap half the tequila for mezcal for a smoky edge.
Spicy Noble Punch
Muddle two thin slices of jalapeño in the shaker for a gentle chili heat.
Frequently asked questions
Which tequila should I use?
The recipe was built around Casa Noble Blanco, but any 100 % agave blanco tequila works.
Is the Noble Punch a party punch?
Not in its standard form: it is a single highball. It is easy to scale up in a jug, though.
Can I leave out the bitters?
Yes, but they add aroma and a slight spice that balances the pineapple's sweetness.
