Method

  1. Put white rum, brandy, orange juice, lemon juice and orgeat into a blender with two scoops (about 2 cups) of crushed ice.
  2. Blend for 5 to 8 seconds until just frothy, not slushy.
  3. Pour into a volcano bowl or a large punch bowl and garnish with orange and pineapple.
  4. Pour the overproof rum into the central well only, light it carefully and let it burn out before anyone drinks through long straws.

The Flaming Volcano belongs to the shared tiki bowls of the Polynesian-style restaurants that spread across the United States from the 1940s to the 1970s. These drinks were served in ceramic bowls shaped like volcanoes, with a small well in the middle where a splash of overproof rum was lit at the table.

The recipe is close to the Scorpion Bowl, another shared tiki drink built on rum, brandy, orange, lemon and orgeat. Exact recipes varied from restaurant to restaurant, and no single original version is documented.
