Method

  1. Lightly muddle the coriander in a shaker.
  2. Add the bacon rum, tomato juice, lemon juice, Worcestershire, horseradish, celery salt and pepper.
  3. Fill with ice and shake gently for about 8 seconds.
  4. Double strain into a rocks glass over fresh ice.
  5. Garnish with a small celery stick and a herb leaf, or a strip of crisp bacon.

History and origin

The BLT is a modern bartender creation from the United States that turns the classic bacon, lettuce and tomato sandwich into a cocktail. It builds on two ideas from the craft cocktail era: savoury drinks in the Bloody Mary tradition and fat-washing, the technique of infusing a spirit with a flavourful fat and then freezing and removing the fat.

Fat-washing became popular in the 2000s, when bacon-infused bourbon helped make the method famous. Using aged rum instead adds toffee and vanilla notes that pair well with smoky bacon and sweet, ripe tomato.

Bartender tips

  • To fat-wash, warm 30 ml of rendered bacon fat, stir it into 350 ml aged rum, leave for 4 hours at room temperature, then freeze overnight and strain off the solid fat through a coffee filter.
  • Shake briefly: tomato juice goes thin and foamy if shaken too hard.
  • Keep the fat-washed rum in the fridge and use it within a few weeks.

Use the bacon rum in a full-length Bloody Mary over ice with 120 ml tomato juice.
