History and origin
The Bacardi Cocktail is a close relative of the Daiquiri, made with white rum, lime juice and grenadine instead of plain sugar. It became popular in the United States in the years before Prohibition and appears in many classic bar books of the early 20th century.
Its most famous chapter came in 1936, when the Bacardi company took a New York bar to court for serving the drink with a different rum. The New York Supreme Court ruled that a Bacardi Cocktail must be made with Bacardi rum, a decision that is still quoted in bartending circles. The original recipes call for white rum; aged versions make a different, heavier drink.
Bartender tips
Use a real pomegranate grenadine rather than a red, artificially flavoured syrup; it makes a huge difference.
Squeeze the lime juice fresh, bottled juice makes the drink flat.
If your grenadine is very sweet, reduce it to 7.5 ml to keep the drink dry.
