Method

  1. Add both rums, lime juice, grapefruit juice, simple syrup and allspice dram to a shaker.
  2. Add a large scoop of crushed ice.
  3. Shake hard for about 8 to 10 seconds, until the tin frosts.
  4. Pour everything, ice included, unstrained into a double rocks glass and top with a little more crushed ice.
  5. Garnish with a lime wedge and a slapped mint sprig.

History and origin

The Ancient Mariner is a modern tiki drink created in the 1990s by Jeff "Beachbum" Berry, the writer and researcher who did more than anyone to recover the lost recipes of Don the Beachcomber and Trader Vic. Berry built it as his own take on the Navy Grog, keeping the classic pairing of dark rums with lime and grapefruit but using allspice dram as the key spice, and published it in his tiki recipe books.

Allspice dram, also called pimento dram, is a Jamaican-style rum liqueur flavoured with allspice berries. It was a staple of classic tiki bars but became hard to find for many years before new versions returned to the market. The Ancient Mariner helped show a new generation of bartenders how much depth a small measure of it can add. The name borrows the title of Samuel Taylor Coleridge's poem "The Rime of the Ancient Mariner".

Bartender tips

  • Do not overpour the allspice dram: 7.5 ml is enough, more makes the drink taste medicinal.
  • A blend of a rich Demerara rum and a funky Jamaican rum gives the best depth; a single dark rum works but tastes flatter.
  • No shaker at hand? Build it in the glass over crushed ice and swizzle until the glass frosts; the result is almost the same.
