Shape and purpose
Pitchers are tall jugs of glass or ceramic with a handle and a spout, usually holding 1 to 2 litres. Many have a lip or strainer that holds back ice and fruit while pouring.

How to batch
- Multiply a single recipe by the number of servings.
- Add about 20 percent cold water if you do not shake each drink, to replace the dilution that ice would normally give.
- Mix and chill the base in the fridge.
- Add ice to the glasses rather than the pitcher, so the batch does not water down.
- Add soda, tonic or sparkling wine just before serving.
Tips
Fresh citrus juice tastes best within a few hours. Taste the batch before serving and adjust sweetness or acidity if needed.
