Cocktails served in a Fizz glass
The fizz glass is a small, straight tumbler, shorter than a highball glass, made for fizzes: sours shaken and lengthened with a little soda water, served without ice. The Gin Fizz and the Ramos Gin Fizz are the famous examples. This page lists all recipes served in a fizz glass and explains how a fizz differs from a Collins and how to build a lively head of foam.

Shape and purpose
A fizz glass is a narrow, straight glass, usually holding about 180 to 250 ml. It is smaller than a highball or Collins glass, because a fizz is a shorter drink traditionally served without ice. The narrow shape helps foam rise and hold on top.
Fizz or Collins
Both combine spirit, citrus, sugar and soda. A Collins is built long over ice. A fizz is shaken hard, strained into a chilled glass without ice and topped with a smaller amount of soda. Many fizzes add egg white for a creamy foam.
Which drinks belong here
The Gin Fizz, the Silver Fizz with egg white, the Ramos Gin Fizz with cream, egg white and orange flower water, and other short sparkling sours.
Tips
- Chill the glass well, as there is no ice in the drink.
- Dry shake egg white drinks first, then shake again with ice.
- Pour the soda slowly into the drink so the foam lifts above the rim.
- Serve immediately while the bubbles are fresh.
