History and origin
The Rum Swizzle is widely regarded as the national drink of Bermuda, and several bars on the island claim to serve the definitive version, most famously the Swizzle Inn. The drink is usually made by the pitcher for groups and every bartender has their own balance of rum, juice and spice.
The swizzle technique itself comes from the Caribbean. A traditional swizzle stick is cut from a small tree native to the region, with a few short branches at the bottom; spun between the palms in a glass of crushed ice, it mixes and chills the drink quickly. Swizzles were popular across the West Indies in the 19th century, and the Queen's Park Swizzle from Trinidad is another famous example.
Bartender tips
A Bermudian black rum such as Gosling's is the local choice for the dark rum.
For a pitcher, scale the recipe up, shake it with ice in batches or stir hard, and pour over crushed ice.
No swizzle stick? Roll a bar spoon between your hands; it does the same job.
