Method
Warm a heatproof stemmed glass or coupe with hot water and discard it.
Pour in the coffee liqueur and the hot water and stir.
Lightly whip the cream until it just thickens but still pours.
Float the cream on top by pouring it slowly over the back of a warm spoon.
Garnish with three coffee beans.

Because the liqueur already contains coffee and sugar, the recipe needs nothing more than hot water to open it up. The playful name points to where it belongs: late weekend breakfasts rather than the bar at midnight.

Whip the cream only until it holds soft ribbons; stiff cream sits in a clump, runny cream sinks.
Use water just off the boil, not boiling, so the liqueur keeps its aroma.
For a stronger coffee flavour, replace half the water with freshly brewed hot coffee.
