Bourbon Lancer

Half Old Fashioned, half glass of fizz. Bourbon brings vanilla and warmth, Angostura adds clove and cinnamon, and cold Champagne lifts it all into something bright and festive. Easy to build, and a good use for the last glass in an open bottle.

Method

  1. Fill a highball glass with ice cubes.
  2. Add the bourbon and bitters, plus the sugar cube if you want it softer, and stir briefly.
  3. Top slowly with chilled Champagne.
  4. Stir once, very gently, to combine without losing the bubbles.
  5. Express a lemon peel over the drink and drop it in.

History and origin

The Bourbon Lancer is a simple sparkling highball with no documented inventor or date. It belongs to the family of spirit and Champagne drinks that includes the Champagne Cocktail and the French 75, in which a measure of spirit and a few dashes of bitters are lengthened with sparkling wine.

Unlike the French 75 it has no citrus juice and is served long over ice, which makes it drier and more whiskey-forward. The lemon twist adds aroma without acidity. Keep the recipe simple and let the quality of the bourbon and the wine do the work.

  • Use a brut sparkling wine: sweet fizz clashes with the bourbon.
  • A dash or two of orange bitters alongside the Angostura adds a brighter citrus note.
  • Pour the Champagne down a bar spoon to keep more of the bubbles.
